Poaching is a way of cooking an egg by removing the shell and placing the inside of the egg in a cup and carefully sliding it from the cup and into a deep pot of hot water, but not boiling water. Once it is in the water, the egg is left to cook for approximately 5 minutes. It is then removed with a slotted spoon and served. The healthy way to make a poached egg is to discard the egg yolk and just cook the egg white. Poached eggs can be served on toast smeared with a tablespoon of low-fat cream cheese, or on toast with broiled slices of tomato.

Boiled
Boiled eggs are made by immersing the eggs in hot water (not boiling) with the shells on and cooking them for about a minute or two, after which time they are set aside for about 14 minutes with a cover on the pot. The white part of the hard-boiled eggs makes a healthy dish when sliced and placed on top of a tossed salad. Hard-boiled egg whites can also be chopped up and made into egg salad. Make healthy egg salad by mixing in 1 tablespoon of cholesterol-free mayonnaise and ½ teaspoon of prepared mustard. Serve the egg salad on slices of whole-wheat bread.

Scrambled egg whites can be made in a healthy way by cooking them in extra-virgin olive oil with onions and asparagus. Sauté 1 cup of fresh, cut asparagus and a ½ cup of chopped onions in a tablespoon of extra-virgin olive oil until asparagus are soft and onions are translucent. Break open four eggs and put only the egg whites in a bowl. Beat the egg whites with a fork and add them to the pan, scraping the mixture periodically as the eggs cook to prevent sticking. Cook until egg whites no longer look wet. Season with black pepper, if desired, and serve when done.
